Happy to help. How about using tahini or sunflower seed butter instead of peanut butter? You can use that on whole grain toast with a delicious jelly or jam? Also, use that for a snack with a banana instead of peanut butter. Also, carry around pumpkin seeds, sunflower seeds and sesame seeds for a snack to make your own nut-free trail mix. Also, coconut milk yogurt is made without dairy/milk and it's delicious. You can add fruit to that and a scoop of the seed butter above for flavor and protein!
